Indian Chef Balbir Singh, at Trans Asia, who has been
in Sri Lanka since 2004, started his profession in Bangalore.
He said it has been more of a practical and hands
on experience, throughout his working career,
where he also had the privilege of working with famous
culinary experts like Balaeed Singh, at the Le Meridien
for four years. His cooking preferences are mainly from
the Moghul and Rajasthan regions.
His likes to share Lasooni Barha; mutton chops, done
tandoori style. This is his favourite dish. According
to him, this dish has a different flavour and aroma,
than the other tandoori dishes, (which the guests have
tasted), due to some ingredients, he has used.
