Dine Sri Lankan cake at Mahaweli Reach

Saliya Dharmasena, the Pastry Sous Chef of Mahaweli Reach Hotel Kandy has given us tips to prepare a popular Sri Lankan cake, which is a tea time favourite among the guests. Saliya, commenced his career in the hotel industry from Kings park hotel in Kandy and has worked in many leading hotels including Yala Safari Beach Hotel, Light House, Galle, Triton Hotel Ahungalla and over sees in UAE and KSA.

 

Ingredients
Flour 200 g
Baking powder 1 tsp
Baking soda 1/2 tsp
Kitul treacle 400 ml
Scraped coconut 01 nos
Sweet cumming 1/2 tsp
Cardamom 05 nos
Lemon zest 04 nos
Ginger preserve 100 g
Date 100 g
Sultana 100 g
Cashew nut 100 g
Bread dough 300 g

Method
First mix flour with baking powder and baking soda and keep it aside. Then put treacle, cardamom, sweet cumming and lemon zest and boil it. When it is boiled, add scraped coconut and mix well for five minutes. Add bread dough and mix well with coconut mixture. When it is mixed well, add bread dough and the flour mixture and mix well. Then remove from the heat. Cover the baking tray with aluminum foil. Bake the cake at 140 C° for 30 minutes. .
